Brewed in 2007 Sanin Togo

Although it is brewed sweet, it has a viscous taste typical of aged sake, and the sweetness, combined with the sense of maturity, gives it depth. The acidity and slight bitterness complete the overall balance.

Brewery: Fukura Shuzo, founded in 1889. The representative brand was named San’in Togo after Lake Togo (formerly Togo Town), known for the Hawai Onsen and Togo Onsen in Yurihama Town, Tottori Prefecture. Inheriting the brewing techniques of Izumo Toji, the brewery is committed to small-scale brewing using local water, rice, and people. They use the water used to grow the juicy “Nijisseiki” pears, a local specialty, as the brewing water for their sake.
